Shrimps Saganaki (Garides
Saganaki)

Simple to make and very tasty.

INGREDIENTS (6 Portions) 1 kilo large shrimps
250 grams feta cheese 1 teacup olive oil 4 ripe tomatoes or 1 can peeled
tomatoes 1 large onion finely chopped 1 green pepper finely chopped
(optional) 1 garlic clove (optional) 1 teacup parsley,finely chopped
salt and pepper to taste a pinch of sugar 1 small glass of dry
wine PREPARATION Peel, discard the seeds and mash the tomatoes.
Heat the olive oil in a large frying pan, add the onions and the garlic and fry
until golden brown then add the wine, the tomatoes, salt, pepper and sugar and
bring to a boil. Place the shrimps into a casserole and pour the thickened
sauce over them. Sprinkle with parsley. Bake in an oven at a moderate temperature
for an hour. Shortly before serving add the feta cheese broken into chunks. This
recipe can also be prepared in a large covered frying pan. In this case it is
best to slightly fry the shrimp before adding to the sauce. Simmer for 15 - 20
minutes. | |
