Stuffed Tomatoes (Tomates
Gemistes)

traditional summer dish with many variations. Usually this meal is prepared with
a variety of vegetables, such as tomatoes, round green peppers, zucchinis or aubergines.

INGREDIENTS (6 Portions) 12 round tomatoes or 6 round tomatoes
and 6 round green peppers 1 medium onion finely chopped 1 1/2 cups olive
oil 500 grams mince meat 1/2 cup rice 1/2 cup finely chopped parsley
some cinnamon powder or clove powder (optional) salt and pepper to taste
2 cups tomato juice bread crumbs PREPARATION Wash the
tomatoes and peppers. Cut a thin slice off the top where the stem is, like a "hat",
and put aside. Remove the seeds from the peppers and with a teaspoon scoop
out the pulp from the tomatoes and blend. Heat 1/2 a cup of olive oil in
a deep frying pan and braise the onions and the mince meat. Add the blended tomatoes,
the rice, the parsley, the cinnamon or clove, salt and pepper to taste and simmer
for half an hour. Fill the tomatoes and the peppers with the mince meat
sauce, without over - filling them, cover them with the "hats" and arrange them
in a baking pan. Pour the rest of the olive oil and the tomato juice on top and
sprinkle with the bread crumbs. Bake in a moderate oven for approximately an hour.
