Eggs in Tomato Sauce
(Strapatsada)
| An
Ionian Island variety of an omelette. A child's favourite meal, easy and quick
to prepare as a last minute solution. A perfect combination with French fries. |
INGREDIENTS
(6-8 Portions)
3/4 kilo ripe, peeled and grated tomatoes
4 tablespoons
olive oil
a large pinch (1/2 teaspoon) sugar
8 eggs
salt and pepper
to taste PREPARATION
Put the grated tomatoes and the olive oil
into a large frying pan, add salt, pepper and sugar and simmer until the tomato
juice has evaporated. Break the eggs into the sauce and stir thoroughly at a low
temperature until the mixture blends together. Quick tip: use a
can of peeled tomatoes instead of fresh ones. | |
